Summer Quesadillas



There are some "home" days where I whip up a box of mac and cheese and eat it with my three children.  Then there are those days when I eagerly wait through their lunch time for nap time, and then choose to prepare myself some tasty grown up food for lunch.  Today was one of those days.  

Here's today's super simple Summer Quesadilla:

*Sharp Cheddar Cheese
*Swiss Cheese
*3 Slices of Tomato (quartered)
*3 Fresh Basil Leaves (chopped)
*A Few Dashes of Balsamic Vinegar
*2 Tortillas

Place tortilla on a skillet over medium heat.  Add cheeses (you can really use any variety of cheeses that you have on hand) and the top tortilla.  Heat, flip, heat.  Once the cheese begins to melt (and both sides have been heated), open the quesadilla and add the tomatoes and basil, as well as a few dashes of balsamic vinegar.  Heat for another 30 seconds on each side, or until your desired crispness ;)  Slice and enjoy!

Note: It would be easier, of course, to just put all the "insides" in at the start, but I just didn't want my tomatoes and basil to "cook" today...Do it how you prefer ;)  It will be good either way!  You can also use any cheeses you may have on hand!
