I just finished making a batch of mint marshmallows dipped in chocolate for St. Patrick's Day. They are delicious! I followed my usual marshmallow recipe (you can find it HERE), but instead of adding peppermint extract, I added 3/4 tsp. mint extract (I still added 1 T of vanilla extract). I also added green food coloring to the mix. I swirled it in after I poured the marshmallows into a greased 11x13 dish, which is why mine are more swirled. If you put the coloring directly into your bowl during the last minute of mixing, your marshmallows will be uniformly green. When your marshmallows are completely done (mixed, poured, set, cut, and sugared), you are ready to add some chocolate!
Melt some chocolate chips in the microwave, and dip the bottom of each marshmallow in the chocolate! Place on wax paper and place in the fridge to set. Enjoy!
As an added note: I used honey in this particular batch instead of corn syrup. Just substitute it equally in the above linked recipe. Also, honey based marshmallows take longer to "set", so just keep them in the fridge a little longer. :)
