Muesli Parfaits

In my recent search for healthy recipes, I stumbled across this delicious breakfast!  Muesli is basically a breakfast cereal of uncooked oats with fruit and/or nuts.  In Switzerland and Southern Germany, it is also sometimes served as a light evening dish (thanks Wikipedia:) ).  I made these parfaits this morning for breakfast, and everyone loved them, so I thought that I'd share :) 

  1. Toast 1/2 cup sliced almonds for 3-5 minutes or until they begin to brown and become fragrant.
  2. In a bowl, mix together 1 cup milk, 1 cup non-fat yogurt (I used Greek Vanilla Yogurt), 1 cup oats (I used old-fashioned),  2 TBS honey, and 1/4 tsp vanilla.
  3. Divide yogurt mixture among 4 cups/bowls.  Sprinkle with almonds and fruit (can be fresh, dried, whatever you like!).  We did blackberries today, which were $1 per 6oz package at Winco yesterday.  I also heard from the Hungarian man behind us in line at Winco that they are super cheap at Costco right now, too!  
 If you want your oats to be a little "softer" (since they're uncooked), just let it sit for a minute before eating it...the yogurt will soften it up.

Any time my whole family enjoys a recipe, I feel as though I've hit the jackpot.  Making one thing instead of four things is so much simpler!  Also, each of the 4 servings is about 300 calories, FYI.

  1. Huh, I have never tried uncooked oats.. with anything. And you say they are good? Well, ok this is way too easy. I will have to remember to get some yummy berries for this though cause just the thought of uncooked oats... well it doesn't sound good. Healthier though then baking them in a yummy, sugary mixture for sure:)

  2. I bet Emma would love it. I have oats, and the yogurt, just need to get the berries. I put them on my shopping list:)
